White Tea

White tea is a very rare kind of tea that is only harvested once a year. It consists of the buds and first two leaves of the tea plant that are picked in early spring before they open. White tea steamed straight after picking to de-enzyme the leaves so that there is no fermentation. White tea contains three times as many polyphenols (antioxidant chemicals that neutralise cell toxins) as green.
