What is Cinnamon?

Cinnamon is the dried inner bark of the evergreen tree and is one of the oldest spices dating back around five thousand years. The Cinnamon plant is home to Sri Lanka and Indonesia; it has leaves approximately 3 . 7 inches in length. Once the bark is peeled and dried these are then curled into sticks which are known as quills.
